Cilantro's recently opened on MacFarland Street in downtown Charleston. Owner Virgil Sadorra opened the Tex-Mex eatery where his former restaurant Delish operated until it was destroyed by fire earlier this year.

At Cilantro's, patrons have a choice of meats, fillers, sauces and salsas to fill tacos or burritos. They also can choose "shirtless," meaning without a taco shell or tortilla.

Sadorra says he plans to open a new Delish Express soon near the state Capitol. He also plans to start construction on a new restaurant in Charleston early in 2007, which is also when he plans to open a tapas kitchen in his Vandalia Lounge.
